What is the method to create Freeze Dried Coffee?

Freeze Dried Coffee is a coffee product that is convenient and safe for consumption with its meticulous making methods which is an innovation for coffee products that helps maintain the value and the coffee bean’s real taste.

What are the steps of making Freeze Dried Coffee?

1st Step: Freezing

  • Prepare the coffee: Start by preparing the coffee that is to be freeze dried by selecting strongly brewed coffee.
  • Freezing: Take the prepared coffee and refrigerate it at low temperature (-40°C to -50°C) until the coffee becomes completely ice solid.

Step 2: Primary Drying

  • Decrease the pressure: Put the freeze coffee into the vacuum dryer to start the ice sublimation process.
  • Sublimation: Decrease the pressure of the vacuum dryer to minimum (approximately 0.1 mbar) to make the ice flake sublimate (change from solid state to vapor) directly without changing states into liquid. This process will take time and delicate control of the temperature to allow the ice flakes within the coffee to vaporize continuously without causing chemical changes to the coffee.

Step 3: Secondary Drying

  • Eliminate the moisture: The coffee will still have some moisture after most of the ice flakes have vaporized. This step involves additional drying to remove the remaining moisture.
  • Secondary Drying: Slightly increase the temperature (approximately 20°C to 30°C) while still maintaining the low pressure to vaporize the remaining moisture within the coffee.
  • Check the moisture: Examine the moisture level in the coffee carefully to make sure it is completely dry and has a very low moisture level (usually less than 2%).

After these 3 steps, the coffee should become freeze dried. It will be able to keep for a long time and can be used by just adding hot water. The coffee quality will remain similar to that of freshly brewed coffee.

What are the advantages of freeze dried coffee?

Choosing freeze dried coffee can benefit your coffee business as follows:

1. Retain the quality and taste of the coffee.
As the production process doesn’t use heat for drying, this helps preserve the nutritional values, taste, and aroma of each coffee bean strains while the taste and aroma when brewed will still be as close to fresh coffee.

The coffee that has been frozen and dried will leave hard parts that are completely dried and have a longer shelf life than other coffee types. It can be stored up to 2-3 years when stored in appropriate containers.

3. Easy to improve the taste
Due to the form of crystalized coffee that dissolves easily in water, therefore, you can mix or flavor the coffee as desired, such as mixing powdered milk or various creams.

4. Save time on brewing coffee.

What are the steps of making freeze dried coffee?

The process of making freeze dried coffee are as follows:
Selecting and grading the coffee beans.
Start by selecting high quality coffee beans by considering the source, size, color, and integrity of the beans so that you acquire good quality coffee into the production process. For example, Brazilian originated sources that are the best production source of freeze dried coffee in the world nowadays.
Coffee Roasting
Put the selected coffee beans into the roasting process by using coffee roasting machines that have precise temperature controls, between 200-230 celsius, to get the best tastes and desired aroma from the coffee beans.
Extracting Coffee
Once you’ve acquired the roast ground coffee, getting quality coffee extraction in this step would require hot water at a certain temperature for extracting coffee to draw out the taste, caffeine, and other solution out from the coffee powder.
Freezing
The first step of the freeze drying process is to freeze the concentrated coffee water at the temperature between -40 to -50 celsius until the coffee water turns into flakes.
Vacuum Drying
Put the freeze dried coffee into the vacuum drying machine by using the technique that vaporizes the ice from the coffee without using heat by creating vacuum condition and a little bit of heat until the ice evaporates into vapor and is sucked out until remaining only complete dried coffee powder.
Packing and Sealing
Pack the freeze dried coffee in a safe container like a vacuum aluminum foil bag or vacuum glass bottle to prevent it from absorbing moisture from outside.
Quality inspection and distribution
Inspect the coffee powder quality with different experiments like analyzing the odor, taste, moisture, and microorganisms. If it passes the standards then it can proceed to the labeling process and distribution next.
