Techniques on How to Choose Coffee Machines for Newbies

Most coffee entrepreneurs would focus on the store location or the main coffee bean that would be used to make coffee when investing in their coffee shop, but one of the significant factors that they might over look is purchasing the suitable coffee machine that has the necessary functions for the store without learning about the specifics of the coffee machines. Pressure is extracting coffee by force with hot water. The espresso machine’s best pressure would be 8 to 10 bar (baristas would set at 9 bars as standard) but if you use more than this would cause the coffee beans to be too extracted; resulting in the harsh, bitter, and burnt flavors or called “over extraction”, quite like speeding up the coffee’s extraction process and ruins its best flavor.

Moreover, the hot water temperature that is used to extract coffee should be at 92 °C. If more than that, the coffee flavor would be too strong; might cause it to taste bitter and burnt. At the same time, if the water temperature is too low, the extracted coffee will taste bland, harsh, and have less coffee body.

However, the coffee’s flavors might not solely depend on the hot water’s temperature but also from other factors as well like the coffee breed, roasting degree of the coffee bean, or the coffee bean’s grinding textures.

What should you consider when selecting a coffee machine?

First, explore your own coffee shop.

1. How much is your budget? / What is your initial budget? You should select the coffee machine that works in your budget (but you shouldn’t always select the cheapest option because it might lead to frequent maintenance issues. Consider purchasing a good coffee machine for long term or at least 5-10 years usage).

2. How long is the payback period from the selling price of each coffee cup? Choosing the coffee machine can depend on the menu’s selling price as it will be significant for the time it takes to get the pay back. It might take a long period to pay back if you purchase a coffee machine worth a hundred thousand baht while selling coffee with the price ranging 35 to 70 baht.

3. Forecast how many cups can be sold each day As each coffee machine has different efficiency in continuous brewing, choosing a coffee machine that has lower coffee brewing efficiency per day would risk damaging the machine if the location has high volumes of customers therefore causing you to pay higher maintenance costs. On the other hand, purchasing an expensive coffee machine for a low customer area would result in a longer payback period.
